Breakfast in bed – Crunchy, Yoghurt Parfait

When the weather starts to cool down, there’s nothing better than snuggling down into bed and indulging in a delicious breakfast! While I love to cook, breakfast, for some reason, has always been an exception. Maybe it’s the early morning gym sessions that make me seriously hungry or the excitement for the day ahead – I am not one to cook in the mornings! So, I turn to muesli and quick oats! Also, a great and easy options to pack for work during the week or breakfast on the go. If you chose the right one, muesli can have lots of benefits on your body. Fibre, good fats, protein and even super foods help you kick start the day the right way. Here is a recipe that I’m loving right now using Freedom Foods Crafted Blends Vanilla, Maple and Flaked Almond Muesli with Nuts.

Crunchy Muesli Greek Yoghurt ‘Parfait’

Ingredients:

Muesli
Blueberries (or fruit of your choice)
Greek Yoghurt
Toppings of your choice: flaked almonds, coconut, honey

Method:

In a glass, layer muesli, Greek yoghurt, blueberries and toppings. Repeat until the glass is full, finishing with the fresh berries on top. Perfect for eating in bed!

 

For another quick and easy weekday breakfast option, try overnight Bircher Muesli with Apple & Berries.

Method:

The night before place ¼ cup oats, a small handful of chopped mixed nuts, a pinch of ground cinnamon and a sprinkle of pepitas and chia seeds into small bowl and pour over ¼ cup Australia’s Own almond milk. Cover and place in the fridge overnight. In the morning serve topped with a dollop of Greek yoghurt, grated or sliced apple and fresh berries. For an extra treat drizzle with a touch of maple syrup.
