Chocolate leftovers: Rocky Road!!!

Do you have a tonne of chocolate left over from Easter? Or do you have a pantry filled with treats that you’d like to use up? Making a Rocky Road is the perfect, delicious solution. Make it for a kids birthday party, treat your colleagues at work or enjoy it with friends on a Friday night. This recipe creates a soft yet crumbly, creamy but nutty delight! You can use many things from your pantry including raisins, nuts, coconut flakes, marshmallows and even lollies! Go crazy, experiment and treat your loved ones.

Ingredients:

200g good-quality milk chocolate
75g good-quality dark chocolate
25g unsalted butter
50g mini marshmallows
50g shortbread biscuits, chopped into bite-sized pieces
150g macadamia nuts

Method:

1. Line a 3cm-deep, 8 x 25cm pan with plastic wrap. Set aside.
2. Place the milk, dark chocolate and butter in a heatproof bowl over to melt over a pan of simmering water. Stir continuously until it starts to melt. Stir in the remaining ingredients.
3. Spread mixture into pan, chill in fridge until hard (about 1 hour). Slice and enjoy!

My pantry finds: chocolate, Macadamia nuts, Shortbread biscuits, marshmallow and butter.
Melt the chocolate, butter and your added ingredients over boiling water.
Once combined, place into the pan and cool
